Fixing the “Cold Edge” Problem in Large Rotary Ovens
If you’ve spent any time with a large rotary oven, you know the frustration of the cold edge. You pull out a batch of bread and the center looks perfect, but the loaves near the edges? They’re pale. The crust is off. It’s a headache that usually comes down to the gap between the heating elements and the oven walls. As the drum spins, the heat just doesn’t hit the periphery hard enough. We fix this with circular ceramic infrared heaters. No more guessing games—just high-intensity heat that actually reaches the edges.
How it actually works
Most standard heaters are a bit unpredictable. You get these annoying hot spots in the middle and “dead zones” at the edges. Our ceramic heaters handle things differently. They use a special coating that turns electricity into short-wave infrared radiation. Instead of waiting for the air to warm up (convection), this heat punches straight into the dough. By matching the wattage to the actual size of your drum, we make sure the heat is steady from the center all the way to the rim.
Built to last (and a word of caution)
These things are tough. We house the resistive wire in ceramic so it doesn’t oxidize or burn out when things get scorching hot. You get a steady, reliable heat that doesn’t dip just because the oven is at peak temperature. But here is the catch: these heaters ramp up fast.Really fast. If your ventilation isn’t dialed in, you might scorch the outside of your product before the middle is even cooked. You’ve got to find that sweet spot between your wattage and your rotation speed so you don’t overheat one specific area.
Getting them installed
The best part? You don’t have to tear your oven apart. These are designed to be drop-in replacements for those old tubular heaters. They have a small footprint, so you won’t be modifying your chassis or fighting with the frame. I recommend wiring them to a PID controller. That way, you can crank up the power specifically for the edge zones. It kills the cold-spot problem entirely and gives you the kind of consistent results you usually only see in those pricey European ovens.
