Most convection ovens are just giant heat sinks. They spend way too much time and energy trying to get the air hot before the bread even feels a thing. We do things differently. By using short-wave infrared (IR) elements, we aim the heat straight at the dough. It’s a total shift in how things work. Instead of waiting for a slow soak, you get a response that’s almost instant. The Tech Side of Things We kept these at 110V for a reason. It means you can plug them right into a standard North American outlet without messing around with transformers or fancy wiring. Here is the cool part: IR radiation travels in a straight line. The water and fats in your dough just soak it up immediately. You aren’t wasting time waiting for the entire oven cavity to warm up. Your preheat time goes from minutes to seconds. It’s fast. Really fast. What They’re Made Of We use high-purity quartz glass for the elements. Why? Because it can handle the shock of heating up and cooling down rapidly without cracking. The internal filament is built for high power, but since the heat is radiant, the element doesn’t have to stay “on” just to keep the surface warm. You flip the switch, and the heat hits the bread right away. A Few Things to Keep in Mind These are easy to swap in if you’re replacing those old, clunky resistive coils. You wire them up, and your bake times drop. But a word of warning: this stuff is intense. If the element is too close to the bread, you’ll scorch the crust before the inside is done. You’ll want to double-check your mounting brackets to make sure there’s a steady gap. Also, if you’re running these at full blast all day, make sure your housing has plenty of airflow. You don’t want your control board cooking itself while the bread is baking. The end result? You stop heating up the whole room and just focus on the bread.
